Raw, Local Honey
Raw honey has not been processed or pasteurized, and contains small particles of pollen, propolis and beeswax. It is filled with phytonutrients and enzymes, which have both antioxidant and anti-inflammatory properties.

Why is my honey crystallizing over time?
Honey is made up of water and a mix of sugars—mostly glucose and fructose. Over time, the water separates from the glucose, causing the sugar to take crystal form. Unfiltered honey tends to crystallize faster than filtered honey, because crystals will begin to form on the particles of pollen, propolis and beeswax. New crystals will continue to build upon older ones until all of the glucose in the honey has crystallized. The type of nectar the bees collect influences the rate of this process, as every flower’s nectar has a different ratio of glucose to fructose.

How does crystallization affect the honey?
This crystallization process is completely natural and has no effect on the honey other than color and texture. Many people prefer it this way because of its ability to spread without dripping. You can easily liquefy the honey by placing the jar into a bowl of hot water and letting it rest until the crystals dissipate. Never boil or microwave your honey, as this will affect the flavor and destroy beneficial nutrients.
