Black Currant Fool
Fools are basically Elizabethan desserts of fruit juice or pulp blended with beaten cream and then folded with sugar. The resultant stiff mixture is served in small dishes or glasses.
Ingredients
- 500 g Plaid Shirt Farms Black Currants
- 100 g granulated sugar
- 200 g whipping cream
- 200 g Greek yogurt
Instructions
- Simmer the black currants for about 10 minutes with the sugar until the fruit has broken down and the juices have become syrupy, cool. Whisk the cream until soft peaks hold, add the yogurt, mix again briefly and then swirl in the black currants. Combine as much as you want – I like to see some seams of pure black currant, but it is up to you. This served 4 with a bit left over for someone’s breakfast.
Credits
A black currant fool also provides an ideal base for an ice cream. All you need to do is to churn the fool in an ice cream maker and you have a completely different kind of dessert.
