Ingredients

  • ¼ cup Haskap vinegar
  • ½ cup olive oil
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon Dijon mustard
  • Salt and freshly ground black pepper to taste
  • 1 small garlic clove minced (optional)

Instructions

  • In a small bowl or jar, whisk together the Haskap vinegar, honey or maple syrup, and Dijon mustard until well mixed.
    1/4 cup Haskap vinegar, 1 tablespoon honey or maple syrup, 1 teaspoon Dijon mustard
  • Slowly drizzle in the olive oil while continuously whisking to create a smooth emulsion.
    1/2 cup olive oil
  • Add salt, pepper, and minced garlic (if using). Stir well to combine all the flavors.
    1 small garlic clove, Salt and freshly ground black pepper
  • Taste the vinaigrette and adjust the seasoning if necessary. Add more honey or vinegar depending on your preference for sweetness or acidity.
  • Drizzle over your favorite salad greens, roasted vegetables, or use as a marinade for chicken or fish.
